【Scallion Pancakes】Eugenia Chow | Taking the small steps towards an ethical life
A bit about yourself:
I am a 19-year-old born and raised in Hong Kong, passionate about environmental justice and social responsibility. As a strong believer that individual actions carry tremendous weight, I run a blog and Instagram page (@eugreenia). When not writing about how to live more consciously in Hong Kong, I am usually eating, exploring, or baking up some vegan goods!
1 / What makes a good meal?
Good (plant-based) food, good company, and good dessert!
2 / Can you share a memorable experience of ‘community’ or ‘togetherness’ in your upbringing?
An example of community in my upbringing would be celebrating Chinese New Year each year with my family. This tradition usually involves firstly a meal with my mom’s side of the family, then a gathering at my dad’s parents’ home. Although not every member of the family is necessarily doing the same thing at once — some are playing mahjong, some are eating candy from the 全盒 (candy box), and others are playing Switch on the TV — the collective feeling of everyone being in the same house and feeling the ‘togetherness’ of family members is something that I cherish.
3 / The year 2030 is an important target for global climate goals. What does this mean to you? What kind of world do you wish to see then?
衣 Wearing | Probably the same clothes as now, if we’re talking true sustainable fashion!
食 Eating | Hopefully plant-based versions of Hong Kong cuisine (including things such as pineapple bun and egg tart) that I can eat alongside all my friends and family!
住 Living | Cozy, and hopefully powered by renewable energy.
行 Being | A place where people feel safe and can get along well with one another.
4 / To make a vegan lifestyle accessible, what are some things you wish to see more of in Hong Kong?
I hope to see more restaurants incorporating at least one or two vegetarian dishes that can be transformed into vegan dishes as well!
5 / Share your meatless recipe.
【Scallion Pancakes】
Growing up, it's always been a weekly routine to visit my grandma and have lunch together on weekends. There's one specific Shanghainese restaurant that we used to always visit (sadly closed now) and we'd order the same set of dishes — scallion pancakes being one of them. I recently learned that these are usually cooked with lard, so I was very excited to make a veganised version of this and share it with my family!
Ingredients:
400g all purpose flour with 280g cold water
A bunch of scallions
