自家製紅豆蓉配椒鹽脆餅 x 自創春天

2020年 | 2020年隔離期間的另一項發明!三月時,當世界上許多地方都開始迎接春天,我身處芝加哥,而這邊的天氣預告卻仍說每星期都會下雪。

隨著4月4日臨近,我看到上海的朋友都在安排野餐及各樣活動,盡享清明節長週末的好天氣,我便決定試做青團,創造自己的春天。

青團是清明節將近時在上海及周邊省份經常找到的小食。居住上海的那幾年,一看到店鋪裡出現嬌小綠色的紅豆餡糯米球,便是春天的可喜跡象。 

所以我決定試做青團!

但是⋯⋯這並不是青團的食譜,而是紅豆蓉配椒鹽脆餅!

在製作青團的過程中,我做了太太太多紅豆蓉——於是衍生了這個美味的配搭!

 不過我要事先作出警告,我幾乎可以肯定,我在這段留家隔離期間所增的磅,都是這個配搭所致!

份量: 其他

所需時間:1小時

材料:

紅豆 1 杯 / 約 200 克
水 3 杯
糖 1 杯
一小撮鹽

步驟:

  1. 將洗淨及瀝乾了的紅豆浸過夜或至少8小時。浸得越久,烹飪時間越短。

  2. 瀝乾水份,將紅豆放入萬能煲或壓力煲,加水。

  3. 煮大概40分鐘直至紅豆變軟。

  4. 用刮刀搗碎紅豆。

  5. 加糖,用慢火煮去多餘水分,邊煮邊攪拌,直至紅豆變糊狀。

  6. 買一包椒鹽脆餅,配上紅豆蓉供食!

Homemade Red Bean Paste with Pretzels x Spring Forward

2020 | Another 2020 quarantine invention! It was March and, while much of the rest of the world was beginning to celebrate spring, I was in Chicago and the weather forecast was still predicting snow at least once a week.

As April 4 approached and I saw that my friends in Shanghai were organizing picnics and other warm weather activities for the Ching Ming Festival long weekend, I decided to create a piece of spring for myself and try making 青團 (qingtuan).  

Qingtuan are a snack commonly sold in Shanghai and surrounding provinces before the Ching Ming Festival. The appearance of the little, red bean stuffed glutinous rice green balls in shops was a welcome sign of spring for me during my years living in Shanghai.

So, I decided to give making qingtuan a try!

But... this isn't a recipe for qingtuan. This recipe is for red bean paste and pretzels!

In the process of making the qingtuan, I made wayyyyy too much red bean paste – and this tasty food combination was born! 

Be careful though, I am pretty sure the couple kilos I have put on during this quarantine are probably related to this sweet-salty food pairing!

Serves: Other

Total cooking time: 1 hour

Ingredients:

1 cup Chinese red beans / azuki bean (around 200g)
3 cups water
1 cup sugar
A tiny pinch of salt

Steps:

  1. Wash the red beans and soak the dried red beans at least 8 hours or overnight. Longer soaking time can shorten the cooking time.

  2. Drain and add around 3 cups of water in a high pressure cooker along with the beans.

  3. Cook the beans for around 40 minutes or until quite soft.

  4. Smash the beans with a hard spatula. 

  5. Add sugar and heat over slow fire to cook off extra water until form a paste texture. Stir from time to time during the process.

  6. Buy a bag of pretzels. Dip pretzels into red bean paste and eat!
