雜菜黃薑飯 x 下班後的色彩

2016年 | 香港的工時長已是眾所周知。慶幸我兒仍愛在家用膳,但回到家已不早了。為令他的食欲不會因過累而影響,所以盡我所能在飯餐上增添色彩,易消化且飽腹。

記得他洗澡出來看到餐桌上的那碟飯菜,不其然的「嘩」一聲,「擺埋款噢」。哈哈 😄

簡單的蔬食亦可以為他在忙碌完的一天加上點綴。自此,我就以此基礎作出變化。大家為生活努力,各司其職,加油!

所需時間:30分籦

材料:

黃薑粉
藜麥
糙米
紅黃甜椒
豆卜
蘆筍
甘筍
烤麩
即食腰果
鮮茄
鮮冬菇
蛋(可選)

*可根據個人口味調節蔬菜份量
*所有蔬菜洗好及切塊

步驟:

  1. 先加入黃薑粉煲藜麥和糙米飯。

  2. 用平底鍋炒熱紅黃甜椒、烤麩,用鹽和黑椒調味,盛起備用。

  3. 把鮮茄炒成醬,加少許糖調味,加入蛋(純素版可免)、豆卜。

  4. 另用白鑊炒香鮮冬菇,加入鹽和黑椒調味。

  5. 將蘆筍、甘筍炒熟,加入腰果。

  6. 上碟時,將米飯放一邊,番茄醬放在飯旁,醬上擺上豆卜和冬菇,最後排好其他蔬菜和腰果。

Mixed Vegetables Turmeric Rice x A Night-time Rainbow

2016 |  It’s no secret that Hong Kong’s working hours are long. Thankfully my son still enjoys eating at home, but he can no longer come back early. To make sure he keeps his appetite even when he’s tired, I’ve tried to add more colours onto the plate with food that is filling and easy to digest.

I remember him coming out of the shower and, seeing this plate of rice on the table, exclaimed, “Wow, you even plated it nicely!”. Haha 😄 

Simple veggies can add a bit of colour as he wraps up another busy day. Since then I’ve used this foundation to change the way I cook. We all work hard in different ways. Add oil! 

Serves: 1

Total cooking time: 30 minutes

Ingredients:

Turmeric
Quinoa
Multigrain rice
Red and yellow peppers
Tofu puffs
Asparagus
Carrots
Wheat gluten
Cashews
Tomatoes
Shiitake mushrooms
Egg (optional)

*Vegetable portions can be adjusted according to taste
*Wash and chop all vegetables

Steps:

  1. Cook the quinoa and rice with the turmeric.

  2. Use a pan to sauté the red and yellow peppers and wheat gluten. Season with salt and black pepper to taste. Set aside.

  3. Add the tomatoes and fry to a sauce; season with a bit of sugar. Add the egg (can do without in vegan version) and tofu puffs.

  4. Use another wok to fry the mushrooms, season with salt and black pepper.

  5. Add the asparagus and carrots to fry. Add the cashews.

  6. When plating, place the rice on one side, and tomato sauce on the other. Put the tofu puffs and mushrooms on the sauce. Finally, plate the other vegetables and cashews.
