素糯米飯 x 返樸歸真

父母因工作關係只會在農曆新年才放大假。我們從小的新年慣例便是一家人出外旅行,對於一般新年「傳統」食物或習俗反而沒有太多經歷。但自疫情開始後,旅行變得奢侈。今年我們決定返樸歸真,在家團年。媽媽特意炮製素食糯米飯,不知會否變成新傳統?

份量:3-4 人

所需時間:1小時或以上

材料:

糯米 1 杯
荷葉
冬菇 3 隻(浸軟切粒,冬菇水留下)
菜脯 少許(切粒)
粘米 1/2 杯
蔥花
炸花生碎

調味料:

素蠔油  2 湯匙
豉油 1/2 湯匙
老抽 1 湯匙
糖 1/2 湯匙
鹽 1/2 湯匙
麻油 1 湯匙

步驟:

  1. 糯米洗淨,浸至少3小時。隔去水份,瀝乾備用。

  2. 乾荷葉浸暖水直至軟身,瀝乾備用。

  3. 熱鑊放油,先用慢火炒香冬菇。加豉油和鹽。放入菜脯同炒,加糖和麻油。盛起備用。

  4. 糯米、粘米下鑊,用冬菇水及清水炒15分鐘。

  5. 放入冬菇、菜脯、老抽和素蠔油,攪拌均勻,半熟時熄火。

  6. 用荷葉將已半熟糯米飯包好,蒸約15分鐘。

  7. 最後加入炸花生及蔥花作裝飾,即可享用。


 

Vegan Sticky Rice x Back to Basics

Because of the jobs they had, the only long break my parents ever had was over Lunar New Year. Growing up, my family’s New Year ritual was to make the best use of our time together and go travelling - which means I am quite unfamiliar with much of the traditions around the festival. Under the pandemic though, travelling has become a luxury. This year, we decided to go back to basics and celebrate at home. My mum made this vegan sticky rice as one of our festive dishes. Perhaps this is the start of a new tradition?

Serves: 3-4 people

Total cooking time: 1 hour or more

Ingredients:

1 cup glutinous rice
Lotus leaves
3 shiitake mushrooms, soaked till soft and chopped (keep the mushroom water)
Some dried radish, chopped
1/2 cup short-grain rice
Spring onion, chopped
Fried peanut pieces

Condiments:

2 tbsp vegan oyster sauce
1/2 tbsp light soy sauce
1 tbsp dark soy sauce
1/2 tbsp sugar
1/2 tbsp salt
1 tbsp sesame oil

Steps:

  1. Wash the glutinous rice and soak for at least 3 hours. Drain and set aside.

  2. Soak the dried lotus leaves with warm water until soft. Drain and set aside.

  3. Heat a wok with oil under low heat. Fry the mushrooms until fragrant. Add soy sauce and salt. Add the dried radish pieces, add sugar and sesame oil. Remove from wok and set aside.

  4. Put glutinous rice and sticky rice into the wok. Fry with some water and some of the mushroom water for 15 mins.

  5. Add the mushrooms, dried radish, dark soy sauce, and vegan oyster sauce. Mix well. When half cooked, turn off heat.

  6. Use the lotus leaves to wrap the half-cooked rice. Steam around 15 mins.

  7. Finally, garnish with roasted peanuts and spring onion. Serve!
